FFC #14 Adding some extra… make your own marinade

Usually how I marinate meat for burritos/fajitas.
If I was having a stir fry then I’d probably add in a spoonful of curry powder too.

A decent attempt at any kind of marinade will bring all sorts of benefits to food. Firstly, it will reduce the amount of salt needed during cooking. Secondly it will help you cut down on having to use heavy cream or tomato based sauces in order to pack in as much flavour as possible. And third throw away the packets of artificial flavours that consists mostly of caking agents, salt & sugar.

Instead use fresh garlic, onions, chillies, lemons (or oranges to replicate a healthier version of “Fanta” chicken 😜) and spices such as paprika, turmeric & cumin and a pinch of salt & pepper. Roughly chopped it all up and is it in a bowl along with some meat or fish (chicken works really good, especially with the zesty lemon)

Leave it overnight in an airtight container in the fridge. 

Cook everything in a deep tray/dish with a cup of boiling water and let the meat poach for 30 -45.

When cooked the flavour is unbelievable.

Also great during the summer, using chicken legs, cook them this way to ensure the meat is tender, then finish them off on the BBQ.
